Fantastic Peanut Brittle

Stir together sugar and syrup in a 2 quart batter bowl. Place in microwave and cook 3½ - 4 minutes. Add peanuts and cook 3½ - 4 Minutes. Watch color as one it turns it goes quickly. Syrup should be caramel color. Add butter and vanilla to syrup, blending well. Return to oven and cook 1-2 minutes more if needed. Peanuts will be slightly browned and syrup very hot. Add baking soda and gently stir until light and foamy. Pour mixture onto lightly greased cookie sheet. Pull apart with your hands as much as possible. Let cool about ½ hour. Lift and flip over. When cool, break into small pieces and store in airtight container.
Note
If raw peanuts are used, add ¼ t. salt and add nuts when mixing sugar and syrup.
