6 carrots, sliced (or 1/2 bag frozen carrot slices)
2cup chopped onions
2tbsp thyme
4clove garlic, minced
3lb chicken breast filets, cut into small bite size pieces
1tsp sea salt
1/2tsp black pepper
2cup frozen corn
2cup frozen peas
1cup instant rice

Add all ingredients, except corn, peas and rice, to the slow cooker. Cover and cook on low 6-8 hours, or until carrots are tender and chicken is done. Add corn, peas and rice the last 10-15 minutes of cooking time.
