Bone In Or Boneless Prime Rib Roast

  1. Combine garlic, oregano and red pepper to form a paste. Press paste evenly over surface of beef rib roast. Do not preheat oven. Place roast on a rack, fat side up in open roasting pan. Insert meat thermometer so bulb is centered in the thickest part, but not resting on bone or in fat. Do not add water. Do not cover. Roast in 325 degree oven (slow) to desired doneness.

  2. Allow 23-25 minutes per pound for rare; 27-30 minutes for well done. Remove roast when thermometer registers 135 degrees for rare, 155 degrees for medium, 160 degrees for well done. Allow rib roast to stand 15-20 minutes in pan before carving. The roast will continue to rise about 5 degrees in temperature and reach 140 degrees for rare,. 160 degrees for medium and 165 degrees for well done.
