Cocoa Bundt Cake

Ingredients
    Cake:
  • 1 2/3 cup all-purpose flour
  • 1 1/2 cup sugar
  • 1/2 cup cocoa
  • 1 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 2 eggs
  • 1/2 cup shortening
  • 1 1/2 cup buttermilk or sour milk
  • 1 tsp vanilla
  • Chocolate Glaze:
  • 1/4 cup sugar
  • 1/4 cup water
  • 1 cup chocolate chips
Instructions
    Cake:
  1. Heat oven to 350 degrees. Generously grease and flour 12-cup Bundt pan. In large mixer bowl, blend flour, sugar, cocoa, baking soda, baking powder, and salt. Add eggs, shortening, milk and vanilla. Beat on low speed 1 minute, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Pour into prepared pan. Bake 50-55 minutes or until toothpick inserted in center comes out clear. Cool 10 minutes; remove from pan to wire rack. Cool completely. Drizzle with Chocolate Glaze.

  2. Chocolate Glaze:
  3. In small saucepan, bring sugar and water to rolling boil, stirring until sugar is dissolved. Remove from heat. Immediately add chocolate chips; stir with wire whisk until chips are melted and mixture is smooth. Cool until slightly thickened.

  4. Microwave directions: In small bowl, microwave sugar and water on high, about 1 minute, or until boiling. Proceed as directed above.

Note

To sour milk, use 1 1/2 tablespoons vinegar plus milk to equal 1 1/2 cups.
