Spread 1 pkg. roll mix on bottom of 9 x13 inch ungreased pan.
Mix cream cheese, ¾ cup sugar, egg yolk and vanilla until creamy and spread over rolls. Put other package of rolls on top.
Beat egg white until stiff. Spread over top. Sprinkle ¼ cup sugar on top and nuts if desired.
Bake in a 350 degree oven for 30-35 minutes.
