Eggnog Waffles

Ingredients
  • 2 1/3 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 2 cup eggnog
  • 2 large eggs
  • 3 tbsp butter, melted and cooled
  • 3 tbsp brown sugar
  • 1 tsp vanilla extract
Instructions
  1. In a large bowl, whisk together the flour, baking powder, baking soda, salt, nutmeg and cinnamon.

  2. In a medium bowl whisk together the eggnog, eggs, melted butter, brown sugar and vanilla.

  3. Gently fold the eggnog mixture into the dry ingredients. Be careful not to overmix - a few lumps is okay.

  4. Pour about 1/4 cup batter into each square well of the waffle iron and cook for 3-5 minutes, or until edges are golden. Repeat with the rest of the batter.

  5. Serve with whipped cream, a sprinkle of nutmeg and syrup.
