Blend eggs, milk, sour cream, butter and seasoning thoroughly.
Spray a 9 x 13 inch pan well with cooking spray. Pour egg mixture into the pan. Add additional ingredients that you like in your favorite omelet, except cheese.
Bake at 350 degrees for approximately 20 minutes. When the eggs are almost set, put any cheeses you want and bake 5-10 minutes more. Test to see if they are cooked through with a toothpick or butter knife. When it comes out clean, it is done.
Eggs can be made the night before and reheated the next day. Leftovers can be microwaved. This can also be frozen for a future meal.
