Mix cup of sugar and cornstarch together in saucepan. Stir water in gradually. Bring to boil. Boil 1 minute, stirring constantly. Then add fruit. Pour into 10 x 6 inch baking dish. Dot with butter. Sprinkle with cinnamon. Stir together tablespoon of sugar, flour, baking powder, and salt. Cut in shortening with a pastry blender. Stir in milk to make a soft dough. Knead lightly. Drop by spoonfuls onto fruit. Bake at 400 degrees for 30 minutes. Serve warm with the juice and ice cream.
Peach or Apricot: Use fruit with 1 cup sugar
Blackberry or Boysenberry: Use 3 cups berries with 3/4 cup sugar
Cherry: Use sweet cherries. Add 3 drops almond extract
