Funnel Cakes

Ingredients
  • 2 beaten eggs
  • 2 cup sifted flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1.5 cup milk
  • Powdered Sugar

    Heat oil to 360 degrees in 8” skillet.

    Combine eggs and milk. Sift flour, baking powder and salt together. Add to mixture and beat smooth with rotary beater or wire whisk. Test mixture to see if it flows easily through funnel; if too thick, add milk; if too thin, add flour.

    Pour about ½ cup batter in funnel; be sure you hold your finger on the bottom. Release batter in hot oil in spiral shape into a 4" circle. Fry until golden, about 3 minutes. Turn and fry about 1 minute more. Drain on paper towels. Sprinkle with powdered sugar.
