Grape Chicken Salad

Ingredients
  • 2 cup diced chicken breast
  • 1 1/2 cup seedless grapes
  • 1/4 cup chopped celery
  • 2 tbsp chopped peanuts of walnuts
  • 3 tbsp lowfat mayonnaise
  • 1/2 tsp salt
  • Dash pepper
  • 6 small romaine or iceberg lettuce leaves
Instructions
  1. Chop celery and peanuts. In a medium-size bowl, mix together chicken, grapes, celery, peanuts, mayonnaise, salt and pepper. Place a lettuce leaf on a plate and scoop about ½ cup of chicken salad onto it.
