In large bowl combine 2 c. flour and yeast. Blend water, 3 T. oil and salt; heat to lukewarm. Add to flour mix; beat on medium speed 3 minutes. Stir in 1½ - 2 cups more flour to make dough stiff. Knead on floured board until smooth. Place in greased bowl; turn once to grease entire surface. Cover and let rise 1 hour until double. Punch down; let rest 10 minutes. Form into 2 balls. Roll each to fit a 15 inch pizza pan. Place in pans and form edges. Prick crusts. Bake at 450 degrees for 15-20 minutes. Spread pizza sauce over surfaces. Sprinkle with shredded cheese. Add desired toppings and drizzle 1-2 T. olive oil over all. Bake 10 minutes longer.
Pizza Sauce:

Sauté onion in oil until golden. Add garlic and cook 1-2 minutes longer, stirring. constantly. Add remaining ingredients and simmer slowly, uncovered for 1 hour. Remove bay leaf. Use half the sauce to make 2 pizzas. Freeze remainder. Makes 1 quart sauce.
