Parmesan Pork Tenderloin

For Confit:

  1. Melt butter over medium heat, in a large saute pan. Add onions, sugar and vinegar. Stirring often, cook until liquid is reduced to a syrup-like consistency and onions are tender, approximately 25-30 minutes. Set aside.

For Roast:

  1. oven to 400 degrees. Spray a baking sheet with non-stick cooking spray. Dip each tenderloin in melted butter, then roll in cheese and once again in melted butter. Place tenderloins on the baking sheet and sprinkle with remaining cheese. Bake 25-30 minutes, or until meat thermometer reaches a temperature of 140 degrees. Remove from oven and let pork rest for 2 minutes. Slice on a diagonal and fan medallions onto plate. Top with warmed red onion confit. Serve immediately.
