Potato Salad

  1. Peel and rinse potatoes. Add potatoes, water and 1 t. salt to large saucepan. Cook on high heat, uncovered, until boiling. Cover and reduce to medium heat and cook for 35 minutes or until potatoes are tender. Remove from heat and water; cool in refrigerator. Dice potatoes and place in a large bowl with onion, celery, radishes and green pepper. Add eggs. In a small bowl combine remaining ingredients, then add to potato mixture. Stir until well blended and refrigerate until ready to serve. Garnish with paprika if desired.
