Combine milk, egg yolks, ¼ c. sugar and tapioca in 1 quart measure. Stir until smooth. Microwave on HIGH, uncovered, 5-6 minutes or until mixture boils, stirring once. Cool 10 minutes. Beat egg whites until foamy. Gradually add sugar and vanilla; continue beating until soft peaks form. Gently fold pudding into egg whites. Let cool. Spoon ½ c. fresh fruit into each of 6 dishes. Top with pudding.

Tip:
Layer fruit and pudding in parfait glasses or put fruit on top of pudding. Amount of sugar may be decreased if desired.
